  • King Salmon: 1 pound, fresh.
  • Cooked Jasmine Rice: 1 cup.
  • Breadcrumbs: 2.5 cups.
  • Eggs: 2, for binding.
  • Mayonnaise: 1 tablespoon (Kewpie or regular).
  • Green Onion: 1 tablespoon, thinly sliced.‍
  • Pepper: 1 teaspoon.
  • Onion Powder: 2 teaspoons.
  • Garlic Powder: 1 teaspoon.
  • Chili Powder: 1 teaspoon. ‍
  • Lemon: Zested for brightness.‍
  • Salt: To taste.‍
  • Oil: For baking.

Let’s Get Cooking!

Step 1: Prepare the Salmon

  • Preheat your oven to 375°F.
  • Place the salmon on a lined baking sheet, drizzle with oil, and season with salt.
  • Bake for 6–8 minutes or until just cooked through. Remove from the oven and set aside.

Step 2: Mix the Ingredients

  • Preheat the oven to 400°F.
  • In a large bowl, combine the cooked jasmine rice, breadcrumbs, eggs, mayonnaise, green onions, spices, and lemon zest. Mix until well combined.

Step 3: Add the Salmon

  • Gently flake the cooked salmon into the bowl and fold it into the mixture, being careful not to overmix.

Step 4: Shape and Bake

  • Roll the mixture into ÂĽ-cup-sized balls (roughly mandarin-sized) and place them on an oiled baking sheet, leaving about ½ inch between each piece.
  • Lightly press each ball to create a patty shape.
  • Bake at 400°F for 12–14 minutes or until golden brown and crisp on the edges.

Step 5: Serve and Enjoy

  • Pair with a simple arugula salad dressed in lemon-dill vinaigrette and topped with shaved Parmesan for a refreshing contrast.
