Let’s Get Cooking!

Step 1: Prepare the Salmon

  • Preheat your oven to 375°F.
  • Place the salmon on a lined baking sheet, drizzle with oil, and season with salt.
  • Bake for 6–8 minutes or until just cooked through. Remove from the oven and set aside.

Step 2: Mix the Ingredients

  • In a large bowl, combine the cooked jasmine rice, breadcrumbs, eggs, mayonnaise, green onions, spices, and lemon zest. Mix until well combined.

Step 3: Add the Salmon

Step 4: Shape and Bake

  • Roll the mixture into ÂĽ-cup-sized balls (roughly mandarin-sized) and place them on an oiled baking sheet, leaving about ½ inch between each piece.
  • Lightly press each ball to create a patty shape.
  • Bake at 400°F for 12–14 minutes or until golden brown and crisp on the edges.

Step 5: Serve and Enjoy

  • Pair with a simple arugula salad dressed in lemon-dill vinaigrette and topped with shaved Parmesan for a refreshing contrast.

Why Wild-Caught Salmon Matters

Wild alaskan salmon offers a superior flavor and nutritional profile compared to farmed fish. Sustainably sourced, it’s rich in omega-3 fatty acids, high-quality protein, and essential vitamins. The state of Alaska works extremely close with commercial fishing to minimize bycatch and to ensure that future runs will continue to be plentiful.

Nutritional Spotlight

These salmon rice cakes are not only packed with protein but also deliver a balance of healthy carbs, fats, and spices. The addition of green onions and lemon zest boosts freshness, while the simple baking process keeps them light and guilt-free.

Bite into these tender, flavorful patties and enjoy a dish that’s as wholesome as it is delicious. Perfect for sharing—or savoring all on your own!
